Dairy farming has long been integral to the agricultural landscape of Schleswig-Holstein, a verdant strip of land between the North Sea and the Baltic, which at its narrowest point, between Husum and Schleswig, is only 36 kilometres wide. The tradition of cheese production on the region’s farms goes back to the Middle Ages, but interest in local cheesemaking has greatly increased over the last decade.

 

Today there are well over 30 local producers, offering more than 100 types of cheese, such as Tilsiter, a pale-yellow, semi-firm cow’s cheese, with a slightly shredded texture, a reddish rind and a fat content between 45% and 65%. “Slow food” enthusiasts claim that local cheesemakers are “the wine-makers of the north”. The popular “Schleswig-Holstein Cheese Route” now runs for around 500 kilometres through the heart of this region. Cheese can be bought from the dairies themselves, though strict hygiene regulations mean that not all are open to visitors.
