Kölsch Beer


Howver many different sorts of beer there are. No Cologne Brauhaus or pub would think of serving anything but the local bevy, called Kölsch, a light, sweet beer which comes in Stangen - slender glasses holding no more than 0.2 litres. The taste is hoppy, and the alcohol content is high (4.8%), the result of a special brewing process using a top fermented yeast, which floats to the surface and is then skimmed off.

 

 

Kölsch has a long history, going back to 1874, and can now only be brewed in and around Cologne according to strict rules. However, the taste changes from brewery to brewery, many of which have “brew-houses” serving typical Cologne dishes as accompaniment. When you buy Malzmühle or Päffgen beers, you can glimpse the actual brewery behind the bar. The beer is served at long, wooden tables by waiters, dressed in blue aprons, called Köbessen, who are renowned for their sharp Kölner banter.
